Mock Mashed Potatoes Using Cauliflower

Ingredients

    -2 packages of frozen cauliflower or 2 medium heads of cauliflower
    -4 oz cream cheese
    -1/4 cup sour cream
    -1.5 cup shredded monterey jack cheese
    -.5 cup shredded cheddar
    -salt and pepper to taste

Description

I've Adapted A Few Recipes To Make This Version. You Can Also Mix In Bacon, Green Onions, Or Add Roasted Garlic To Make A Garlic Mashed Potato Version. If You Want A Delicious Creamy Soup Base, Thin It Out With A Bit Of Cream Until Desired Consistency.
