West Indian Chicken And Squash Recipe

Ingredients

    - 2 Tbsp olive oil
    - 2 cups chopped onion
    - 2 cloves garlic, minced
    - 1 Tbsp tomato paste
    - 4 tsp mild curry powder
    - 1/4 tsp ground cloves, nutmeg, or cinnamon (optional!)
    - 3 cups chopped tomatoes
    - 2 cups chopped sweet red and yellow peppers
    - 1/2 cup chicken broth
    - 2 lbs. skinless chicken breasts (can use drumsticks and thighs to make tastier but it will change the nutrition)
    - 4 cups peeled squash (butternut is a good choice), cut into 1/2 inch cubes
    - salt and pepper
