    1 Chicken thigh, no skin/bones (2-3cm chopped pieces)
    1 medium onion, sliced into strips
    2 fresh eggs, partially whisked
    1/2 cup flat leaf parsley and stems (roughly chopped)
    1 - 1.5 cups hot steamed rice

    Sauce:
    - 1 Tbsp mirin (or sake)
    - 1 Tbsp Brown sugar
    - 1 Tbsp Dashi stock
    - 1 Tbsp Soy Sauce
