Ingredients
- 2 Cans Artichoke Hearts in water, sliced
2 Cans Sweet Yellow Corn
1 Med Can Sliced Black Olives
2 Fresh Red Bell Peppers
1 Large Fresh Sweet Yellow Onion
2 Cans Organic Garbanzo Beans
2 Cans Purple Hull Peas (or use black eye peas)
1 bunch of Basil
Salt and Pepper to taste.
May add a clove or two of minced garlic.
Tomatoes and Avocado or good in this, but I add them on the side, as they would get too mushy if just left in the mix the couple days that this lasts.
