Apple Cheddar Soup


    1/2 cup finely chopped onion
    1 tablespoon olive oil
    2 med baking potatoes, peeled and diced
    2 cups apple cider
    1/2 teaspoon dried thyme, crushed
    1/2 teaspoon salt
    dash cayenne pepper
    1 med apple, peeled and chopped
    1/2 cup milk
    2 teaspoons corn starch
    4 oz sharp cheddar cheese, shredded ( I use Cabot 75% reduced fat sharp cheddar)


This Is A Recipe That I Found In A Better Homes And Gardens Magazine. I Changed A Few Ingredients To Make It A Healthier Choice.
