Ingredients

    1lb boneless, skinless chicken breasts
    1 cup (dry) brown rice
    1 can black beans, rinsed
    2 ears of corn, kernels cut off
    1 medium onion, diced
    2 stalks of celery, washed and diced
    1 habenero pepper, washed and diced
    juice of 2 limes
    4 cups low sodium chicken broth, divided (an also use veggie broth)
    1 tbsp extra virgin olive oil
    3 tbsp tomato paste
    1 tbsp smoked paprika
    1 tsp cumin
    1 tsp cayenne pepper
    1 tsp salt
