    3 medium or about 16 ounces Yukon gold potatoes, thinly sliced
    2 cups carrots, cut lengthwise in about 2" lengths
    18 cherry tomatoes, cut in half
    1/3 cup Onions, Green or Spring or Scallions chopped or sliced (about 6)
