Quiche W/2% Milk & Half & Half

Ingredients

    1 med onion, diced
    6 oz fresh baby spinach
    4 lg eggs
    1/2 tsp baking powder
    1/4 tsp salt
    pinch cayenne pepper
    2/3 C 2% milk
    2/3 C half & half
    1/2 C feta, crumbled

    Preheat oven to 400F. Lightly grease 9" pie plate. Cook
    diced onion w/small amount oil or cooking spray over medium high heat until translucent and tender. Add fresh spinach and cook until just wilted. Set aside to cool for a few minutes.
    Whisk together eggs, flour, baking powder & salt. Whisk in milk, half & half, then stir in spinach-onion mixture.
    Pour quiche into pie pan, top with feta.
    Bake 25% or until center is set & outside edge is golden brown. Let sit 5 minutes. Serves 6
