    3.5 TBS lemon juice
    1 cups israeli couscous (normal couscous is fine too)
    1/2 TBS lemon zest
    1 cup fresh green beans (or asparagus depending what is in season)
    1 TBS olive oil
    1 TBS toasted pine nuts
    1/2 cup chopped mint or parsley
    1 zucchini diced
    1 red pepper diced
    12 cherry tomatoes halved
