Ingredients

    2 medium or large tomatoes
    3 large stalks Celery
    3-5 small stalks Celery (use all the baby stalks found in the center of the celery bunch)
    ½ large Green Bell Pepper
    1 large Red Bell Pepper
    1 large Orange Bell Pepper
    1 large Onions
    1 large Cucumber (peeled)
    16 Kalamata Olives
    1 or 2 T. juice from the Kalamata Olive jar
    1 (12-16 oz) can Artichokes in brine - NOT in marinade!
    1 or 2 T. juice from can of Artichokes
    4oz. Feta Cheese, crumbled
    ¼ C. Rice Vinegar
    ¼ C. Red Wine Vinegar
    ¼ C. Apple Cider Vinegar
    Optionals –add to taste:
    2 T. Weber Grill Veggie Grill Seasoning
    3 tsp Italian Seasoning
    1 T. Garlic Salt or fresh minced garlic
    3 T. Parsley, dried
