Ingredients
- 3 turkey sausages
1 14oz can chicken broth
1 c lentils
1 bay leaf
1 T olive oil
1 lg onion, chopped
3 cloves garlic, minced
1 medium butternut squash (2 1/2 lb) peeled cut into 3/4" cubes
1 T chopped sage, basil or parley (I use half sage and half rosemary)
salt and pepper to taste (I add dry red pepper flakes)
2 plum tomatoes coarsely chopped (I use a 14oz can whole tomatoes chopped in to pieces
and drained reserving the juice for the lentil water.
