Minestrone With Shrimp, Garbanzo Beans, And Autumn Squash

Ingredients

  • 1-1/2 cups  dried or canned garbanzo beans
  • 1/2 cup  coarsely chopped carrot (1 medium)
  • 1/2 cup  chopped onion (1 medium)
  • 1 clove  garlic, minced
  • 1 tablespoon  extra-virgin olive oil
  • 4 to 6 cups  chicken broth
  • 2 teaspoons  snipped fresh rosemary or 1/2 teaspoon crushed dried rosemary
  • 1/4 to 1/2 teaspoon  crushed red pepper
  • 1   bay leaf
  • 1 cup  cubed, peeled butternut squash
  • 1 medium  tomato, peeled, seeded and coarsely chopped
  • 4 ounces  shelled and deveined small or medium shrimp
  • 2 tablespoons  snipped fresh basil leaves, or 2 teaspoon crushed dried basil
  • 1/4 cup  finely shredded Parmigiano-Reggiano cheese
