Butternut Squash-zucchini Muffins

Ingredients

    1 Small Butternut Squash, peeled, de-seeded, and cubed (yields approximately 2 cups of cubed squash)
    1/2 Zucchini, with skin on, grated
    1 1/2 cup Whole Wheat Flour
    3/4 cup Honey
    1 Large Egg White
    1 tsp Cinnamon
    1 tsp Allspice
    1 tsp Vanilla Extract
    1 tsp Sweetened Cocoa Powder
    1/2 tsp Baking Powder
    1/2 tsp Baking Soda
    1/8 tsp Ground Cloves
    1/8 tsp Nutmeg
    1/8 tsp Ground Ginger
    Confectioners Sugar

Description

A Pain To Make, But When You Allow One Of These Guys To Melt In Your Mouth You Will Forgive That Aspect Of The Recipe. And I Can't Think Of A Better Way To Get In These Two Uber Healthy Veggies.
