    1 cup yellow/orange pepper chopped
    .5 cup onion chopped
    .5 cup golden raisins
    .75 cup chopped pecans (toasted)
    1 cup cut tomatoes (cherry/grape hold up best)
    .33 cup mint leaves chopped

    dressing:
    .25 cup extra virgin olive oil
    .5 cup lemon juice
    .5 tsp. salt
    .5 tsp. pepper
