Mulligatawny

Ingredients

    Chicken Breast - boneless, skinless, 1 lb
    Dried yellow split peas, 1/3 cup
    Boiling water, 8 cups

    Cooking spray, 3 second spray
    Onion, chopped, 1.5 cups
    Apple, cooking such as macintosh, peeled, cored, diced, 1 large (used 2 medium in the calculations though.)
    Curry powder, 2 tbsp

    Whole wheat flour, 1/4 cup
    Salt - dash (or omit)
    Pepper - dash (or omit)

    Carrot, diced, 2/3 cup (used 1 cup in calculations)
    Celery, diced. 2/3 cup (used 3/4 cup in calculations)
    Ground mace, 1/8 tsp
    Ground cloves, 1/8 tsp
    Can of diced tomatoes, with juice, 1 14oz can

    Evaporated milk, skim/nonfat, 1 cup

    Brown rice, 2.25 cups cooked - optional, not included in nutritional info for this recipe.
