Ingredients

    1 lb. sea scallops, rinsed and patted dry
    3/4 tsp kosher salt
    1/4 tsp black pepper, freshly ground
    1 small yellow onion, sliced into half moons
    2 large raw Yukon Gold potatoes, cut into a 1/2-inch dice
    1/2 cup dry white wine
    1 cup fat-free chicken broth
    1/2 cup fat-free skim milk
    2 medium ears corn on the cob, cut off the cob
    1/4 cup Italian flat-leaf parsley, chopped
