Chef Meg's Chicken Cornbread Casserole

Ingredients



    Chicken Filling:
    12 ounces chicken breast, cooked and diced
    1 bell pepper, yellow or orange, diced
    1 cup frozen corn
    1 cup black beans, drained and rinsed
    1 1/2 cup diced tomatoes, fresh or canned no salt added
    2 tablespoons green chilies, diced
    1 teaspoon chili powder
    1 teaspoon cumin

    Cornbread Topping:
    1/2 cup all purpose flour (whole wheat flour will work but the bread will be dense)
    1/2 cup yellow cornmeal
    1 1/2 teaspoons baking powder
    1/4 teaspoon salt
    1/2 teaspoon chili powder
    Pinch cayenne pepper
    2 tablespoons diced jalapeno or green chilies
    1/2 cup frozen corn
    1/4 cup 2% milk sharp cheddar cheese, shredded
    1/4 cup egg substitute
    1 1/4 cup low fat buttermilk
