Spicy Shrimp, Veggie & Cashew Stir-fry

Ingredients

    2 Tbsp. light soy sauce
    1 Tbsp. dark sesame oil
    2 Tbsp. rice cooking wine, or pale dry sherry
    1 1-inch piece peeled fresh ginger
    3 cloves garlic
    1/2 to 1 tsp. crushed red pepper flakes
    1 Tbsp. veg. oil
    1 rib celery
    1 cup snow peas
    1 cup bell pepper (chopped in large pieces)
    1 cup sliced carrots
    1 1/2 cup chopped zucchini
    1 1/2 cup broccoli spears
    3/4 cup roasted salted cashews (4 oz.)
    1 pound peeled and cleaned medium shrimp
    3 scallions, thinly sliced white and green, separated
