    2 cups dry green mung beans
    8 - 10 or so cups of water
    3 tsp oil
    6 cloves garlic, minced
    10 green onions, chopped, keep whites separate
    8 slices of ginger root (about the size of two thumbs), minced
    2 seaquest shrimp rings - tails removed
    1 T salt
    1 can coconut milk (Aroy-D brand)
    Malunggay leaves (if available)
    200 grams fresh spinach
