    2.5 cups peeled and cubed winter squash (acorn, delicata, or buttercup)

    2 celery stalks, diced

    1/2 cup peeled and diced carrots

    2.5 cups cubed potatoes

    1 TSP of dried oregano

    2 TSP of salt

    1/2 TSP of ground pepper

    6 cups water

    4 cups chopped kale

    1.5 cups cooked or canned cannellini beans (15-ounce can, drained)
