Tuscan Bean Soup

Ingredients

  • 3 T olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 green pepper, chopped
  • 2 ribs celery, chopped
  • 2 carrots, peeled and sliced
  • 1 pound Sweet Italian Sausage
  • 2 T dried parsley flakes
  • 1/2 t salt
  • 1/4 t pepper
  • 2 t dried Italian seasoning
  • 8 cups beef broth
  • 1 (14 1/2 oz) can cannellini beans, drained and rinsed
  • 1 (14 1/2 oz) can diced tomatoes
  • 1 cup mini penne pasta
  • 1 cup green beans, fresh or frozen, cut in half
  • 1 small zucchini, sliced
  • 1 cup fresh or frozen spinach, chopped and squeezed dry if using frozen
