Broccoli "fried" Rice

Ingredients

    1/2 cup uncooked brown rice
    1 cup vegetable broth
    3 medium carrots, peeled and diced
    4 scallions, diced
    2 eggs
    1 large crown of broccoli, chopped
    1/2 cup edamame, defrosted (or english peas, I used edamame because it has more protein)
    low sodium soy sauce to taste
    Olive Oil Spray (I use Pam Spray)
