Curried Apricot Chicken, Low Sodium

Ingredients

    1 1/2 cups Onions, quartered or sliced
    2 cloves Garlic, chopped
    2 Tbsp Smart Balance Buttery Spread
    3/4 cup Apple, fresh w/skin, sliced
    3/4 cup Apricot Preserves
    1 envelope Chicken Broth NO Sodium, Herbox
    1 Tbsp Whole Wheat Flour
    2 tsp Curry Powder (up to 2.5 tsp if desired)
    2 tsp Lemon Juice
    dash Black Pepper
    1 1/2 pounds Chicken Breast, fresh, boned skinned

    Garnish with: Craisins, Raisins, Peanuts, Roasted Soy Nuts, Coconut, Chutney, Apple Slices, etc.

    Serve with Brown Rice or Couscous
