Apricot Almond Chicken

Ingredients

    2 1/4 cups chicken broth (I used vegetable cause it was all I had)
    1 cup uncooked long grain brown rice
    1 small onion, chopped
    1/4 cup chopped green pepper
    1/4 cup chopped red pepper
    1 tsp salt (optional - this really boosts the sodium level so ease back on it if you want to)
    1/4 tsp thyme
    1/4 tsp marjoram
    4 boneless skinless chicken breast halves (1 lb)
    4 tablespoons apricot preserves
    1/3 cup sliced almonds, toasted
