Adobo Chicken

Ingredients

    1-2 lbs boneless skinless chicken thighs
    3 cloves garlic, minced
    1 tbsp ground ginger
    3 tbsp olive oil
    1/2 cup water
    1/2 cup vinegar
    about 1-2 cups soy sauce to taste
    1 squirt of mustard, about 1 tsp
    2 bay leafs, whole
    black pepper to taste
