Sausage Strata

Ingredients

2 Tbs coconut or extravirgin olive oil

4 cups unpeeled zucchini in 1/8"-1/4" slices (about 1 lb)

1 small onion, chopped

1 lb. ground turkey

1 tsp salt

1/2 tsp nutmeg

1/2 tsp thyme leaves

1/4 tsp sage

1/16 tsp cayenne pepper

2 Tbs cornstarch

1 1/4 cups chicken broth

1/4 cup heavy cream

1 cup grated cheddar cheese

3 eggs, beaten with fork

1 cup whole grain bread crumbs (make soft crumbs in blender with about 1 1/2 slices bread)

1 clove garlic, minced or 1/8 tsp garlic powder

Serve With Carrots,Oranges, Salad, Lemon Ginger Muffins
