- 1/2 cup chopped onions
1/2 cup chopped celery

3 slices low-sodium bacon, diced or 8 oz fat-free ham, diced
1 14-oz can no-salt tomatoes
1 10-oz can diced tomatoes with chilis
2 cans black beans, drained and rinsed
4 cups beef broth, low sodium
1 pkg frozen cubed butternut squash
1 c. frozen corn
2 links of chicken sausage w/smoked mozzarella & artichoke, cut into bite-sized pieces.
1 Tbsp. ground cumin
1 c. dry sherry
1.5 Tbsp. balsamic or red wine vinegar
salt to taste and cracked black pepper

This A Flavorful Soup I Developed Using A Black Bean Stew Recipe And Adding To It. To Make It Even Lower In Fat, You Can Substitute Fat-free Ham For The Bacon, Or Leave It Out Entirely.
