Vegetarian Paella

Ingredients

    half a raw tomato
    1 med yellow onion
    1 diced carrot
    1 diced red pepper
    1 can sliced mushrooms
    1 cup minute rice, cooked in 1 cup of v-8 cocktail
    1 cup (dry) golden boy 9 bean soup mix - soaked in cold water for 12 hours
    2 stalks celery - diced
    1 c cut up broccoli
    1 c cut up cauliflower
    about 8 tbsp of black chopped olives
    5 pickled jalapeno slices, diced finely
    5% sour cream - about 1 tbsp per serving
    salt to taste
    .5 tsp turmeric
    2 tbsp chili powder
    sprinkle of cayenne pepper, dried
    dried parsley - maybe 1 tbsp or to taste
    4-5 spears asparagus, in 1/2 inch pieces
    2-4 cloves garlic (2 if large) - 2 minced, 2 crushed

Description

Easy & Reheats Well. Very Forgiving In Terms Of The Order You Add Everything (except Tomatoes - Add Last). Don't Overheat Or Overcook - Veggies Should Be Quite Crisp.
