Ingredients
- 500g braising/ stewing steal
Seasoned flour (couple of tbs for dusting the meat)
Vegetable oil for frying onions etc (1-3tbsp, as wanted)
One large onion, chopped
One green pepper (capsicum), de-seeded and chopped
Two carrots, peeled and chopped
One celery stick, chopped
Paprika to taste, 1-3tsp (smoked paprika is particularly good in this)
Tomato puree, 3tbsp or so
Mixed herbs of your choice, about 3tsp to taste (I use oregano, basil and thyme, plus a couple of bay-leaves)
Beef stock, fresh or from cubes - 200ml
Small can of tomatoes, chopped, around 200g
Red wine (optional) 200ml
Worcestershire sauce, a couple of dashes (optional)
Pinch of nutmeg, preferably freshly-grated
Salt & fresh-ground black pepper to taste
Nice served with rice (mixed brown & wild rice is my choice) or mashed potato/ sweet potato, and some green vegetables - none of this is included in the nutritional info, this is just for a large serving of the Goulash.
