    2 cups roasted pumpkin
    2 red onions, chopped into wedges and caramalised
    140 gm diced feta
    zest of two lemons
    1 cup mixed fresh basil, mint and italian parsley, chopped
    salt and pepper
    1 cup baby spinach or rocket leaves
    Dressing
    1 clove garlic, crushed
    1 tbsp olive oil
    juice of 1 lemon
    1/4 cup balsamic vinegar
