Ingredients
- for the sauce( blend or use a food processor)
1-2 mangos (1 cup of fruit, peeled and chopped)
1tbsp minced ginger
juice of 1 lime
1/2 tsp. low sodium soy sauce or tamari
1tsp organic maple syrup
pinch of red pepper flakes
16 pieces of rice paper (in the asian vegetable section, use a little warm water to soften them up)
2 cups of cucumber, seeded and sliced thin, skin on
2 cups shredded lettuce
2 cups shredded carrots
2 red bell peppers seeded and sliced thin
1 cup of bean sprouts
1 cup chopped fresh cilantro
1 cup chopped fresh mint
1 cup chopped fresh basil

These Are Great To Take For Lunch (just Double The Serving) Or To Serve As Summer Appetizers. You Can Add Pepper Flakes For A Little More Kick To The Sauce
