African Pineapple Peanut Stew (moosewood Cooks At Home)

Ingredients

    1 Cup chopped onions
    2 garlic cloves, minced or pressed
    1 Tbsp vegetable oil
    1 bunch Kale or Swiss chard (4 cups sliced) - Kale included in nutritional calcuations
    2 cups undrained canned crushed pineable (20-ounce can)
    1/2 cup peanut butter
    1 Tbsp tobasco or other hot pepper sauce
    1/2 cup chopped fresh cilantro
    salt to taste (dash included in nutritonal info)

    Optional toppings:
    Crushed skinless peanuts (not included in calculations)
    Chopped scallions (included).
