    1 large onion, chopped
    12 baby yellow potatoes, washed and halved
    2 large carrots, cut into 1-inch chunks
    2 large or 3 small parsnips, cut into 1-inch chunks
    1 cup frozen peas
    3 cups low-sodium beef broth, or enough to cover
    1/2 tsp. dried thyme
    1 tsp. onion powder
    salt and pepper to taste
    2 Tbsp corn starch
    1/2 cup water
