    2 pounds (32 ounces) chicken breasts, boneless and skinless
    1 medium red onion, diced
    4 cloves garlic, diced
    1 cup salsa, homemade
    1 can (1.75 cup) low-sodium petite diced canned tomatoes
    1 can black beans, rinsed (1.75 cups)
    1 can sweet corn (1.75 cups)
    6 tablespoons sour cream, reduced fat

    Homemade Salsa:
    3 plum tomatoes
    1 slice sweet onion
    1/2 jalapeno pepper
    2 cloves garlic
    juice from 1/2 lime
    1/4 tsp cumin
    1/4 tsp chili powder
    dash of salt
    grind in food processor until desired consistency is reached
