Hearty Three-Bean Chili

Ingredients

1 Tbsp oil (safflower or canola work well)
1 yellow onion, chopped
2 carrots, chopped
1 zucchini, chopped
1 bell pepper (any color), seeded & chopped
1 cup mushrooms, sliced
4 garlic cloves, minced
1 jalapeno, seeded & chopped
3 Tbsp chili powder
2 tsp cumin
1 tsp ground coriander
1 tsp oregano
tsp crushed red pepper flakes (or cayenne pepper)
2 bay leaves
1 can (14 oz.) diced tomatoes
2 cans (28 oz./each) crushed tomatoes
1 can (15 oz.) kidney beans, drained & rinsed
1 can (15 oz.) black beans, drained & rinsed
1 can (15 oz.) Great Northern (or cannellini) beans, drained & rinsed
1 can (8 oz.) sliced water chestnuts, drained & rinsed
Sea salt & black pepper to taste
