Ingredients


2 tablespoons peanut or vegetable oil, divided
1/2 cup chopped red onion
2 cups bite-sized broccoli florets
1 cup corn (fresh or frozen)
3 cups cold cooked brown rice
1 cup fresh shelled or frozen peas
1/2 pound smoked chicken, cubed (about 2 cups)
1/4 cup finely chopped fresh chives
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Zest of 1 lime
1 tablespoon lime juice

Description

This Is A Great Way To Use Leftover Rice. If You Use Just-cooked Rice, This Dish Will Turn Out Sticky And Gummy.
