Ingredients
- 2 tbsp of good quality vegetable oil
- 1 large onion
- 3 cm ginger
- 2 tbsp oil
- 2-3 handfuls frozen vegetable (carrot, cauliflower, broccoli)
- 1 handful snow peas/snap peas
- 8 baby corns
- 200 ml vegetable stock
- 400 ml coconut milk
- 1 tbsp of maple syrup
- 1-2 tbl green curry paste (vegan are very easy to find)
- salt to taste
- 1 handful peanuts or cashews
- Optional:
- Juice of half a lime (gives the curry a little "fresh/summer" kick)
