Quick And Easy Vegetarian Thai Green Curry (30 Minutes)

Ingredients

  • 2 tbsp of good quality vegetable oil
  • 1 large onion
  • 3 cm ginger
  • 2 tbsp oil
  • 2-3 handfuls frozen vegetable (carrot, cauliflower, broccoli)
  • 1 handful snow peas/snap peas
  • 8 baby corns
  • 200 ml vegetable stock
  • 400 ml coconut milk
  • 1 tbsp of maple syrup
  • 1-2 tbl green curry paste (vegan are very easy to find)
  • salt to taste
  • 1 handful peanuts or cashews
  • Optional:
  • Juice of half a lime (gives the curry a little "fresh/summer" kick)
