Lemongrass Mushroom Soup

Ingredients

1 cup (about 1 oz.) sliced dried shitake mushrooms
2 tablespoons Extra virgin olive oil
3 cups Finely diced onion
3 cups (about 6 oz.) sliced fresh shitake mushrooms
3 tablespoons Minced lemongrass (only use bottom 3 to 4 inches of the stalk)
1 teaspoon Minced garlic
4 cups Low-sodium chicken or vegetable stock
½ tsp Low-sodium soy sauce
Kosher salt, to taste
½ teaspoon Sherry vinegar
½ teaspoon White pepper
Cilantro leaves, for garnish
Chopped scallions, for garnish
