- 2 large egg yolks
- 4 large egg whites

Crabs:- 1/4 cup finely chopped fresh basil
- 2 tablespoons finely chopped fresh tarragon
- 2 tablespoons finely chopped fresh chives
- 1 tablespoon butter
- 1/4 teaspoon salt
- 2 garlic cloves, minced
- 6 (6-ounce) soft-shell crabs, cleaned
