Chicken-and-Seafood Paella

Ingredients

  • 2 cups chicken broth
  • 1/2 teaspoon saffron threads, finely crumbled
  • 1/4 cup olive oil
  • 6 ounces chorizo, cut crosswise into 1/4-inch slices
  • 4 chicken breast halves, skin removed, halved diagonally
  • 2 yellow bell peppers, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon sweet or hot paprika
  • 3 plum tomatoes, cored, seeded and chopped
  • 1/4 cup chopped fresh parsley
  • 2 cups Spanish short-grain rice or Arborio rice
  • 25 small mussels (1 lb.), cleaned and bearded
  • 20 large shrimps (1 1/4 lb.), shelled and deveined
