Ingredients

  • SHRIMP:
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground coriander seeds
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon ground red pepper
  • 1/8 teaspoon freshly ground black pepper
  • Dash of ground nutmeg
  • 36 jumbo shrimp (about 2 1/2 pounds), peeled and deveined
  • Cooking spray

  • SALSA:
  • 6 cups clementine sections (about 6 clementines)
  • 1 1/2 cups chopped peeled jicama
  • 1 cup finely chopped red onion
  • 1 tablespoon minced peeled fresh ginger
  • 1 tablespoon fresh lime juice
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons chopped fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 serrano chiles, seeded and finely chopped
