Ingredients

1 cups (375 mL) basmati grained rice 3 tbsp (45 mL) olive oil 4 black cardamom pods (or 8 green), crushed 2 tsp (10 mL) black mustard seeds 1 tsp (5 mL) cumin seed 3 cloves 1 cinnamon stick 1 medium onion, peeled and diced 1 bay leaf 2 carrots, peeled and cut into -inch (5-mm) dice 1 tbsp (22 mL) fresh ginger, peeled and finely minced 1 garlic clove, minced 2 tsp (10 mL) kosher salt 2 cups (500 mL) broccoli florets 1 cup (250 mL) toasted macadamia nuts, roughly chopped 1/3 cup (75 mL) chopped coriander leaves
