Kasha and Wild Mushroom Gratin

Ingredients

1/4 cup (50 mL) butter 1 large onion, chopped 12 oz (375 g) mixed mushrooms, including shiitake, oyster and brown, sliced 1/2 cup (125 mL) sour cream 3 tbsp (45 mL) chopped fresh dill Salt and freshly ground pepper 1 cup (250 mL) buckwheat 1 egg, beaten 2 cups (500 mL) chicken stock or water 2 tbsp (25 mL) butter

Kasha Is Toasted Buckwheat. It Is A Favourite Grain In Eastern Europe, Served As A Side Dish Or Mixed With Short Noodles As A Vegetarian Main Course. Cooking With An Egg Brings Out The Toasty Flavour.
