  • 1 small onion , finely chopped
  • 1 celery stick, finely chopped
  • 100.0g diced pancetta
  • 500.0g minced pork
  • 200.0ml dry white wine
  • 50.0g parmesan , plus extra for serving
  • 1 large organic lemon
  • 400.0g dried egg tagliatelle (not durum wheat tagliatelle)
  • 3 tbsp chopped flatleaf parsley
