•     Warm sauce to taste
• 1 Tbsp. orange juice
• 1/2 x lemon juiced
•     Salt to taste
•     Freshly-grnd black pepper to taste
• 2 tsp mustard
• 2 tsp horseradish
• 1 tsp paprika plus more to garnish
• 1/2 tsp cayenne
• 1 Tbsp. dry sherry
• 1 Tbsp. cognac
• 1 Tbsp. Cointreau
•     Lettuce finely sliced
