Great Greek Salad

Ingredients

  • Juice of 1 large lemon
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1⁄2 teaspoon freshly ground black pepper
  • 3 teaspoons minced garlic, about 3 cloves
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons chopped fresh herbs (dill, parsley, basil, mint)
  • 1 head red or green leaf lettuce, washed, dried and torn into bite-sized pieces
  • 12 pitted Greek olives
  • 1 avocado, pitted, peeled and diced
  • 1 large, ripe tomato (or 3 or 4 Roma tomatoes), diced
  • 1 medium cucumber, peeled and diced
