Gazpacho Recipe

Ingredients

  • 1 can (46-ounce) tomato juice (vegetable juice is also great)
  • 1 lrg Onion (bermuda or possibly perhaps videlia are both good), finely minced
  • 2 1/4 c. Diced tomatoes
  • 1 1/2 c. Finely minced sweet peppers (mix green, red, yellow, whatever)
  • 1/2 Tbsp. Honey
  • 1/2 med Cucumber, diced
  • 1 med Zuchini, diced
  • 1 x Ripe avacado, diced
  • 3 x -(up to)
  • 4 x Scallions, finely minced
  • 3 Tbsp. Extra virgin olive oil
  • 1/2 x Lemon, juice of
  • 1 x Lime, juice of
  • 3 Tbsp. Wine vinegar
  • 6 x Cloves garlic, chopped
  • 1 tsp Taragon
  • 1 tsp Basil
  • 1/2 Tbsp. Dill weed
  • 3 Tbsp. Parsely
  • 2 Tbsp. Cilantro
  • 1 dsh Grnd cumin
  • 3 x -(up to)
  • 4 dsh Tabasco sauce (I prefer Frank's Red Warm)
  •     Pepper to taste
