- 1 c. 1/2-inch bread, cubes
- 1/4 c. peanut oil
- 1 lrg shallot, thinly, sliced

- 1 lrg egg, lightly, beaten
- 3 Tbsp. extra virgin olive oil
- 1/2 tsp salt
