Turkey with goats' cheese and bacon cream

Ingredients

  • 450 g turkey breasts, cut into escalopes
  • 8 cookedstreaky bacon, cut into lardons
  • 100 g creamy English goats' cheese
  • 2-3 sprigs chopped thyme
  • squeeze lemon juice
For the coating

  • 50 g flour
  • 2 eggs, beaten
  • 50 g dry white breadcrumbs
  • 2 tbsp olive oil
  • 15 g butter
For the sauce

  • 1 tbsp olive oil
  • 2 rashers bacon
  • 2 shallots, finely chopped
  • 150 g fresh garden peas
  • 100 ml white wine
  • 50 ml strong chicken stock
  • 200 ml cream
  • 2-3 sprigs fresh thyme
  • squeeze lemon juice
To serve

  • olive oil mashed potato
  • chopped herbs
