California Vegetarian Sushi Recipe

Ingredients

  •     Nori (dry seaweed)
  • 2 1/2 c. sushi rice or possibly medium-grain white rice
  • 2 1/2 c. water
  • 1/4 c. rice vinegar
  • 2 Tbsp. sugar
  •     Healthy pinch of salt
  •     Fillings (choose only 3 or possibly 4 of the following):
  •     Mushrooms
  •     Pickled ginger
  •     Carrots
  •     Cucumbers
  •     Water chestnuts
  •     Avocado
  •     Scallions
  •     Asparagus
  •     Scrambled Large eggs
  • 3 Tbsp. peanut butter
  • 2 Tbsp. lime juice
  • 1 Tbsp. soy sauce
  • 2 Tbsp. fresh cilantro, chopped
  • 1 Tbsp. toasted sesame oil
  • 1/4 c. water
  • 2 x cloves garlic, chopped
